Spicy Asian Rice Noodle Salad top down

 

Ingredients

  • 7 oz. rice noodles
  • 1 cup of edamame
  • 1 medium red pepper, chopped
  • 2 green onion, chopped (mostly white and light green part)
  • 2 Asian cucumbers, chopped
  • Peanuts, chopped

 

Ingredients for Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons of olive oil
  • 1 tablespoons rice wine vinegar
  • 1 tablespoon maple syrup
  • 1 Thai chili crushed up into small pieces or ¼ teaspoon red crushed chilies
  • ¼ teaspoon garlic powder

 

Directions

  1. Soak rice noodles in boiling water for 5-8 minutes.
  2. Stir all sauce ingredients together.
  3. Combine sauce thoroughly with cooked rice noodles.
  4. Combine the remaining ingredients with the saucy rice noodles.
  5. Chill and serve.
