Ingredients
- 7 oz. rice noodles
- 1 cup of edamame
- 1 medium red pepper, chopped
- 2 green onion, chopped (mostly white and light green part)
- 2 Asian cucumbers, chopped
- Peanuts, chopped
Ingredients for Sauce
- 3 tablespoons soy sauce
- 2 tablespoons of olive oil
- 1 tablespoons rice wine vinegar
- 1 tablespoon maple syrup
- 1 Thai chili crushed up into small pieces or ¼ teaspoon red crushed chilies
- ¼ teaspoon garlic powder

Directions
- Soak rice noodles in boiling water for 5-8 minutes.
- Stir all sauce ingredients together.
- Combine sauce thoroughly with cooked rice noodles.
- Combine the remaining ingredients with the saucy rice noodles.
- Chill and serve.
